This coconut milk rice is perfectly fluffy with a lite coconut flavor and a silky soft texture thanks to the natural oils.
I love Instant Pot rice, but this was next level. Do you know the joy of mango sticky rice?? It’s like that, but savory-leaning.
I used jasmine rice in this version, but it also works well with basmati (brown and white) and long-grain brown rice.
This quick recipe uses some of that Instant Pot: Homemade Coconut Milk from Friday.
Don’t have any on hand? Use water or your favorite plant-milk + 1-3 teaspoons of coconut oil.
A trick I’ve been using to cook the perfect rice is to rinse it beforehand. I didn’t always have to do this, but there have been a few times when I tried making flavored rice with broth or seasonings and at the end of cooking the grains were still hard. This happened both on the stove and at least once in the Instant Pot.
Since I’ve been rinsing all rice—I haven’t had any trouble. It always comes out perfectly tender and fork fluffy.
This makes 6-8 servings and is great for weekly meal prep. Store in a glass container and dish out as needed.
To reheat individual servings sprinkle it with 1-2 teaspoons water and warm in the microwave for 1 to 1 1/2 minutes.
Instant Pot: Coconut Milk Rice + Rice Bowl Idea!
Ingredients
- 2 cups jasmine rice, rinsed
- 3 cups coconut milk (not culinary milk)
- 2 tablespoons coconut cream or coconut oil
- 1/2 teaspoon sea salt
Instructions
- Add rice, coconut milk, and salt to Instant Pot - give it a stir and close the lid. Set the lid to 'seal'.
- Select the rice button. Time should automatically set based on the weight. Mine is usually 10-12 minutes.
- Manually or naturally release pressure. Enjoy!!
