Strawberries in champagne or strawberry soft serve?
Why not both?
We bought champagne the other night and I’m not sure I even like it. If I’ve had champagne before shouldn’t I remember such a thing??
I think I like the taste okay, but I think I get a wicked headache from white wines/champagne. We shall see.
This strawberry banana shortcake soft serve can be fancy like the first pic or deliciously boring like above. Follow your heart.



Peeled frozen bananas are key to making delicious can’t-believe-it’s-not-ice-cream soft serve. They start thawing relatively quick so by the time they are out of the food processor or blender the texture is just right.
I used frozen bananas and fresh strawberries which helped get things moving. If you happen to use frozen strawberries you might need to add a little plant-based milk or water to move things along.
This technically makes two servings, but if you want to make a meal out of it just eat the whole thing. 🙂
It’s 100% good for you.
Even though it’s healthy, it will still take you to the happy dessert place. A little vanilla extract and sprinkle of almond meal is all you need for that ‘shortcake’ decadence.
Strawberry Banana Shortcake Soft Serve
Ingredients
- 4 small to medium frozen bananas, chopped into 1" pieces (399g)
- approximately 8 fresh strawberries (338g)
- 1/2 teaspoon vanilla powder or 2 teaspoons homemade vanilla extract
- pinch of sea salt
Instructions
- Add ingredients to a food processor fitted with an s-blade. Process until mostly smooth, approximately 3-5 minutes depending on how frozen your bananas are.
Notes
Add a sprinkle of almond meal, mini chocolate chips, or coconut flakes for extra decadence!
