Mmm! I love EatPastry and rarely get to try their products as they are MISSING from my region of the state. 🙁 I whipped this up and baked it in a too big bundt cake pan. It was really good, but I would shoot for muffin tins next time. Great flavor and texture for something gluten-free.

I love many Upton’s Naturals products and I love jackfruit (we’ve been buying these cans), but I did not really care for the overwhelming tanginess of their BBQ jackfruit. The tanginess is so overwhelming it’s pretty much just sour. You can probably mellow out the flavor by adding additional sweetener/spices, but alone it will not taste like BBQ sandwich.

Description: Enjoy the taste and texture of eggs but in a more healthful and humane way with the VeganEgg.
To start, I loved this innovative product. But let’s have a moment of realness so you know what you’re getting into if you’ve never had them before. It reminded me of when you go to a pancake breakfast and they are preparing both the pancakes and eggs by mixing water with powder. These won’t have the texture of fresh scrambled eggs, especially because it requires a little trial and error to perfect the cooking process. Use ice cold water as they suggest and double check your quantities before mixing. I found the flavor a little inconsistent over a few batches and added a little more nutritional yeast/black salt to get the flavor I wanted. On the plus, once you perfect the cooking process, it’s incredibly easy to whip up the omelettes you were used to plus it’s less costly on the planet.
