Oooh! This recipe for English Cucumber Canapés sounds so fancy. The e has an accent and they aren’t just regular cucumbers, they are English cucumbers.

A canapé is a type of hors d’œuvre, a small, prepared and usually decorative food, held in the fingers and often eaten in one bite.

This stunning, but simple appetizer has only 2 ingredients and takes less than 10 minutes to put together.
Ingredient 1: English cucumbers large or mini
Ingredient 2: Vegan Thousand Island Dressing
Take about 3 mini cucumbers and make a thin slice to remove the ends. Then cut into about 1 inch chunks. I got about 14 pieces to work with.
Make a little well in the cucumber pieces using a very small spoon/teaspoon/avocado tool (as pictured above). This will remove some of the seed area and leave a nice little hollow to deposit something delicious. Like our vegan thousand island dressing.
Use a teaspoon or half a teaspoon measurement and fill each little hollow with dressing and serve.
Serve with a garnish of carrots, greens, or a sprinkle of chives.
They are the perfect little bite-sized salads. Crunchy and hydrating.
Hummus would be a great filling too! Turn it into a lunch and serve with 1/4-1/2 cup of rice.
