Ask and you shall receive. A few days ago I tried recruiting my co-workers to name the recipes I come up with. And it worked. Meet the V’Ganwich.
This delicious sandwich uses Wednesday’s Ro-Tel Hummus recipe, homemade salsa sauerkraut, green leaf lettuce and black olives.
It’s kind of Italian flavored but kind of Mexican too. Maybe it’s a hybrid? If you added a sprinkle of cumin to the recipe – definitely!
Enjoy this sandwich on toasted Franz bread (my favorite!) open-face style or standard.
Mix it up by adding thinly sliced cucumbers, tomatoes, green olives, jicama, crimini mushrooms, or sautéed tofu!
The V’Ganwich with Ro-tel Hummus
- 2 slices of Franz bread
- 3 tablespoons Ro-Tel Hummus
- 4 tablespoons salsa sauerkraut
- 2 tablespoons sliced black olives
- 2 leaves of green leaf lettuce
Toast bread and spread half the hummus on each slice. Top with remaining ingredients and serve open-face or closed.
The hummus is almost like a cheesy tomato spread and tastes delicious with the crunch of the toast.
