Game changer. That’s what this roasted garlic coconut milk sauce (read: the new vegan cheese) is. I was perfectly content having a pizza of dough, pizza sauce and veggies (no cheese). This cheese sauce though, is a game changer. It made what can sometimes be a boring or dry pizza into that gooey creamy pizza we love.
This recipe is from my friend, Christine, at Colorado Vegan. It’s extra fun to share this because I just realized when we met up (a year ago?) in Denver, we went out for vegan pizza! All things pizza!
I used a sourdough crust from our local IGA that happened to be vegan with a short ingredient list.
The ingredient that truly transforms regular old coconut milk into an almost alfredo like sauce is garlic, specifically roasted garlic. In the first iteration of this pizza I roasted the garlic the night before but later also used fresh garlic – both ways are delicious depending on the flavor or timing you’re going for.
I added a few extra ingredients from stuff we had on hand, like jalapeños and artichoke hearts.
Then you just load it up and bake.
This cheese sets very well and turns a little brown along the edges.
I used coconut milk from a can and got about 3-4 pizzas out of it. That’s right we had pizza everyday over the weekend. It was pretty much heaven.
So….go make this. Seriously.
