I’m back this week with another quick snack to keep you healthy and satisfied, caramel apple bites and peanut butter cinnamon stuffed dates.
This snack is to help you reach for mother nature’s bounty instead of the vending machine or convenient store crap (although many convenient stores now carry fruit!).
Tired, hungry, pms-ie? Grab a
snickers some apples and dates. Dates are nature’s candy. They are sweet and remind me of caramel which is why I’ve filled them with mini pieces of apple.
Dates are a good source of fiber, potassium, protein, and magnesium—they even contain calcium.
Another benefit about dates is they are softer on your teeth than caramel.
Make this snack less cute and more transportable by tossing apple slices, whole dates, some peanut butter, and a sprinkle of cinnamon into a sealable container. Perfect for work, hiking, biking or road tripping.
Caramel Apple Bites and Peanut Butter Cinnamon Stuffed Dates

Ingredients
- 1 large apple, sliced
- 4 medjool dates, pitted and halved
- 1 tablespoon natural peanut butter
- cinnamon to taste
Instructions
- Place cut pieces of apple in each half of 2 pitted dates and fill the other 2 pitted dates with a little peanut butter. Sprinkle with cinnamon and enjoy.
If you’re new to dates, there’s so much you can do with them besides snacking.
You can make a date paste to substitute sweetener in smoothies, oatmeal, or even eat it straight and replace the endurance fuel power gels. So many wonderful options.
