Go Make This: Vegan Yack Attack’s Multiple Personality Artichoke Arugula Soup

VYAArtichokeArugulaSoup2This is a cheat post. Kind of. I had actually intended to point you towards a homemade hand soap recipe, but I haven’t made it yet and don’t think the final product is photographable until the next day so….

Here I am with a soup from Vegan Yack Attack! I made her Multiple Personality Artichoke Arugula Soup earlier this year and shared the pics on Instagram and Facebook.

I might have made it some time ago but it was seriously fantastic so it’s worthy of the ‘go make this’ title.

Recipe

The night I made this, I had all the ingredients except the artichokes, but that was quickly solved by a half mile walk to our neighborhood Trader Joe’s (we still lived in Portland at this time).

I was back home making it in no time and it literally takes no time to whip together.

Besides the obvious amazing flavors, I remember it being a nice balance of acidic and creaminess. The soup derives creaminess from the tofu and vegetable broth. It is perfect. The lemon and seasoned artichokes add the right pop of acidity that makes our tongues happy.

Any chopped greens could be substituted depending on what you have on hand. Arugula is awesome though because it’s tasty, peppery and called rocket in Europe. Why don’t we call it rocket?
