This is kind of a reminder to myself and maybe you about these awesome orange noodles made from sweet potatoes.

We’re sliding further into that cozy colder weather in Portland and are days away from seeing our first substantial rainfall in months. It’s no wonder I have a hankering for something a little warmer and even comforting.
This is super easy to whip up, just spiralize or thinly slice/chop sweet potato, throw in a few other straggling vegetables from your fridge and cover them with water that’s been brought to a boil. Cover with a lid or plate and let sit for 5-10 minutes. While those veggies are softening up a bit, blend a sauce and/or pick out seasonings.
Today I grabbed what was handy and used a dab of miso, dollop of Trader Joe’s tahini sauce, a little of their peanut sauce dressing, tamari, and a little hot water to warm it up and thin it out.
Drain the veggies and sprinkle with a little garlic powder, red pepper flakes, and salt or whatever sounds good….curry seasoning? Okay! Then top with sauce.
