Most of the time when I’m eating mango I can’t help but think about my favorite Thai restaurant, Tusk, back in Batavia, IL. They have the BEST Thai food, the likes of which we’ve been unable to find a comparable love here in Portland. Sad face.
One of my favorite desserts was their Mango with Sticky Rice. Swoon.
This dessert is made with “Sweet sticky rice bathed in coconut milk & palm sugar served with sliced ripe mango”. I quizzed Miki, daughter of one of the amazing chefs, and she explained that making the rice is a long process. So today’s little snack is a 5 minute throw-together tribute to my favorite dessert.
Grab your mango and slice it like above. You can then take each half and peel the skin off using a vegetable peeler (this has become my new favorite way) and then make nice thin slices, laying them in your bowl.
Sprinkle with 1-2 tablespoons of unsweetened, 100%-natural, finely shredded dehydrated coconut. I love the brand, Let’s Do Organic. I order in bulk from amazon. Their flavor is great and they don’t add any of those crazy preservatives and shelf stabilizers like propylene glycol.
Now sprinkle with 1/2 tablespoon of sesame seeds and then drizzle 1 teaspoon of maple syrup over the dish.
