Today’s salad grab. It’s a couple handfuls of mixed greens (the organic kind in ‘tubs’), 4-5 leaves of green leaf lettuce, raw fermented sauerkraut, salsa, 1/2 avocado, quite a few handfuls of cilantro/parsley that were ‘pulsed’ in the food processor first, and juice from 1/2 a lemon.
It was delicious and filling!
Pulsing herbs in the food processor has been my ‘new thing’ this week. They add a bunch of flavor to the salad making it easy to skip or go light on the salad dressing. Sure, you could chop them with a knife, but there’s something about the way the food processor does it, that I really enjoy. The sauerkraut, salsa, and lemon juice – of course – helped with that too.
I would like to try some dill, but I don’t always think to grab that. I’ve gotten so used to having parsley and cilantro in my green smoothies that it’s just second nature to have an abundance of them in the fridge. We always buy a couple bunches of each and they are so inexpensive – it makes me happy to have another use for them.
What’s your favorite thing to add to a salad? fermented sauerkraut and kalamata olives….together.
