This was one of those ‘Why Not?’ recipe ideas. I had some leftover pineapple salsa which was delicious and composed of all the fresh ingredients I would put in a savory or sweet soup smoothie like cucumber, onion, cilantro, pineapple, tomato, and mango. Add to this some greens and a banana or 2 as thickeners as well as healthy additions of fiber and protein and you have yourself a delicious smoothie!
Pineapple Salsa Smoothie
- 2-3 cups Pineapple Mango Cucumber Salsa
- 2 bananas
- 1 head of romaine, end removed
- water until desired thickness
- Add ingredients to a blender and blend until smooth. Enjoy!
What’s the strangest thing you’ve done with leftovers? After this smoothie it was using a curried chickpea rice dish my husband made to make nori rolls. So good.
