2.5 LB Green Smoothie

As Jeremy and I get ready to head back to Illinois, tomorrow, for a 13 day visit, we are eating up the last of our fresh produce and looking forward to being in the state we both grew up/lived in minus the last 7.5 months. We will be visiting family and friends and celebrating the wedding of my friend and sister-in-law. So many exciting things to look forward to in the second half of March! Look forward to our adventures and many many pictures of a dog named, Sugar. Here’s a few photos of our favorite bichon!

 

Sugar, an only child now, gets groomed more than most women. But she’s worth it and she gets a cute bow!

We watched Sugar a few years ago, while Mom and Dad were in Egypt; here is Sugar following their travels on facebook. Yes, that is a skull duvet cover. 🙂

Wow, I digressed a whole ton. Back to the smoothie!

This smoothie was a great way to use up some straggling produce before we leave. I still have a pineapple, celery, kale, and mango to eat before tomorrow and I don’t think it will be a problem.

We had a big kale/sweet potato stir fry last night which made good use of leftover mushrooms, celery, and radishes.

2.5 LB Green Smoothie

    Nutritional Facts - Calories: 542, Fat: 1.6g, Fiber: 28.7g, and Protein: 13g

    Ingredients

    • 3 bananas
    • 2 hearts romaine
    • 2 oranges
    • 2 stalks celery
    • water to desired thinness (start with 1 1/2 cups)

    Instructions

    1. Add to your blender and blend until smooth. If you have a smaller blender, chop the lettuce/celery and add it after you've blended the fruit and water. Enjoy!

    I just got off the phone with my former co-workers and hearing their voices made my heart so happy. Can’t wait to catch up with them next week over my favorite favorite Thai restaurant of all time, Tusk. We will eat there multiple times, while visiting, to make up for having yet to find a favorite Thai restaurant here in Portland.
