I promised our facebook friends I would do a collard recipe every day this week to help in their efforts to use an entire bunch of collards – if they committed to this recipe challenge.
So, I’m going to share my new favorite from the last few days. It is seriously so good and so hard to believe that it all comes wrapped in a nutritious green package. Its the perfect way to get more greens in your day and makes for an easy to carry meal. Take it to work, the movies, on a hike, or a go-to snack in your purse.
Start with a de-stemmed collard leaf or two.
I made two different wraps in the above picture.
The top one is a Banana Peanut Butter Collard Wrap and it is so easy to put together. Spread some natural peanut butter or other favorite natural nut butter of your choice on the leaf – same as you would if it was bread or a tortilla. Place a peeled banana in the center and roll it up.
The second wrap shown is a ‘Nutella’ Inspired Banana PB Collard Wrap. Start the wrap the same way as the top one and just sprinkle with cinnamon raw cacao powder (Navitas Naturals). If you don’t have raw cacao powder, a regular baking cocoa would also work.
