Could you say no to these? I didn’t think so and neither could I. These cubes consist of only 4 ingredients and hardly any effort. The best part, they are ready for nibbling right away!
Call ‘em Gone Apricot Cubes
Ingredients
- 2 cups raw Brazil nuts
- 1 1/2 cups plump medjool dates, pitted and soaked in water for 20 minutes
- 1/4 cup dried apricots (preferably sulfite-free), chopped
- dash of sea salt
Instructions
- Add Brazil nuts to a food processor and blend until crumbly, add drained pitted dates along with salt. Process until incorporated. You should be able to grab a chunk, pinch it between your fingers, and it will stick together. If not add another date or two. Now add the chopped apricots and pulse a few times to mix it up. Press ingredients into a pan of your choice until the top is even. A square pan, 8" or smaller will work best. Cut into cubes and enjoy!
Feel free to sub your favorite dried fruit for the apricots, the base is versatile.
The most recent dates I’ve purchased hale from United with Earth on Amazon.com. I ordered in bulk so received 4 lb. Yay! Using up the last of the dates in this recipe, I decided to get further use out of the package and press the apricot bars into it. It worked great and will make a sturdy and most excellent travel container for the beginnings of our road trip tomorrow.
